  1. Get 2 cups basmati rice
  2. Prepare 2 large carrots

  13. Get 1 tbsp Coriander powder
  14. Take 1 tsp Garam masala
  15. Take 1/4 tsp Allspice powder
  16. Take 1 clove
  17. Get 2 cardamom pods
  18. Prepare 4 tbsp Ghee
  19. Get Cashew nuts , raisins ( fried in ghee ) to garnish
  20. Prepare 1/2 Lemon / lime
  21. Take to taste Salt
  22. Prepare 1 pinch Saffron a pinch soaked in 2 tbsp milk
  23. Take 1/2 cup Paneer ( cottage cheese) cubes, slightly fried in oil
  24. Get 1/2 cup Green peas

Simple and quick mushroom biryani recipe which can be made in few mins. This recipe is a dum style layered biryani recipe, there is no tomato in this and all the flavour comes from the whole spices, herbs, fried onions. There is another version, which is a one pot biryani recipe, will share that soon. Being a vegetarian I substitute mushrooms or mixed veggies.

Steps to make Mushroom (veggie) Dum Biriyani:
  1. For Masala: - In a pan, add some ghee . When ghee gets heated, add ginger garlic paste, chopped green chili, mix well . - Add onion and fry everything well till onion becomes transparent. Next add all the vegetables (chopped carrots, beans, soy chunks, green peas). Sauté everything well and cook for a minute till everything is almost cooked. - Then add cilantro, mint leaves, soy chunks, mushrooms. Also add coriander powder, cumin powder, garam masala and salt to taste and sauté everything well and wait for masala to become thick and dry. Keep it aside.
  2. Rice cooking : - In a pot. add some ghee. As it gets hot, add 1 cinnamon stick or allspice powder, 2 cardamom, 1 clove and fry it well. - Into it add rice and few drops of lemon juice and fry it for 2 minutes or rice becomes dry. - Add 3 1/2 cups of boiling water into to it. Add salt to taste. Cover the pot and wait for rice to cook. - Once the rice is cooked, drain the excess water if any and spread the rice in a plate so that rice doesn't become sticky.
  3. Dum process: - In a large cooking dish, level a part of prepared vegetable masala, Level a part of rice on top of it. Add few drops of lemon, few drops of saffron milk, little bit ghee, fried paneer, fried raisins and cashews, chopped cilantro leaves. Level vegetable masala and rice again. Repeat this process until everything is used. - Cover the cooking dish tight and cook this in slow heat for 10 mins or so until steam comes.
  4. Serve hot. This photo is taken after mixing everything.

If you use soy chunks, you can add them too. Do use a thick bottomed heavy pan or else the biryani can get burnt from the bottom. Veg biryani recipe - For making vegetable dum biryani, basmati rice and vegetable gravy are partially cooked separately first. Then both are assembled in the layers with the topping of nuts, fried onions, saffron-yogurt mixture and mint leaves. Then slow cooked on stovetop or in the oven.
