Transfer the rice pudding to a bowl. Add the sugar and taste, adding more sugar if you want it sweeter. Add the chopped pistachios, stir well, and leave to cool.

Instructions to make Indian Rice Pudding:
  1. Cook the rice with 3.5 cups water. Set aside.
  2. In a large nonstick pan, heat the rice and milk until boiling.
  3. Reduce to a simmer and stir until slightly thickened, about 5 minutes.
  4. Add in all remaining ingredients except the raisins and nuts.
  5. Stir continuously while cooking another 5-10 minutes until slightly thickened.
  6. Remove from heat. Add the raisins and nuts.
  7. Transfer pudding to a serving dish. Cover with plastic wrap directly on the surface of the pudding. This will prevent a "skin" from forming.
  8. Serve at room temperature or chilled.

This Indian Rice Pudding is one of my favorites desserts and it made me nostalgic about childhood days. This is my grandma's wonder recipe. She also adds saffron in it. We call rice pudding recipe as 'Kheer' in India and it is a must during all the festivities and celebrations. Classic Indian Rice pudding made with rice, sugar, milk and flavored with cardamom, nuts and touch of rose water.
