- Spoon the bowl of ingredients on to the slices of bread, and drizzle the balsamic vinegar over top.1. Heat a griddle pan, slice up stick bread, drizzle each side with some olive oil, when pan is hot put bread in till toasted on each side.
Place bread oil side up on an ungreased baking sheet. Basil and tomatoes compliment each other beautifully and are usually overflowing in my garden in the late summer months. You can toast the bread in the oven or on the grill so you don't heat up the kitchen. Pulse until smooth, but somewhat chunky. Dice tomatoes and place in a bowl, mix in chopped basil, garlic, salt, pepper, olive oil and balsamic vinegar and set aside.
