- When ready to bake, set oven to 180 degrees centigrade. Butter an 8inch pan and dust with flour.
- In a saucepan, put butter, sugar, 150ml rum or brandy (water can be used as an alternative) and mixed fruits. Set on medium heat to simmer for 10 minutes. Cool for 15 minutes.

- Leave cake in the pan to cool for at least 20 minutes. Turn out from pan and allow to cool. Wrap cake and feed with brandy once a week.
- Spoon batter into pan and bake until cake is done (when a toothpick inserted in the middle comes out clean)
